Wild Nettle & Charred Onion Lamb Sausage
We make this one using pasture-raised lamb from the Christiansen family in Fairfield. To lean into that earthy flavor, we add hand-picked wild nettles and local onions that we’ve grilled over a flame for a bit of sweetness. It’s finished with fresh garlic and a very light touch of warm spices.
