Herb Roasted Mushroom and Shallot

We use a blend of heart and earthy mushrooms and roast them in a butter bath loaded with thyme garlic and some shallots and finish with a bit of Marsala wine. These are then chopped into our pork and mixed into a semi course ground sausage. Every bite has the roasted mushroom flavor and great on any dish.
